Fresh Feta Falafels
Wow! So good and so filling! And did I mention vegetarian?
Time:
prep: Less than 30 mins.
Ingredients:
Box of Falafel Mix
Green onions
Pita Bread (the pocket kind)
Black Beans
Arugula
Tomatoes
Balsamic Vinaigrette (for topping)
Feta Cheese (for topping)
Directions:
Make Falafel mix according to box instructions.
Stuff pita pockets with all ingredients except the toppings.
Other options:
Make a side dish of steams corn and asparagus!
